Matthew and Heather Linehan of Sparrow Arc Farm grow 105 acres of vegetables annually. They are a part of the Copake Agricultural Center and market their produce almost exclusively to restaurants in Boston and NYC practicing what they call 'lifecycle harvesting'--utilizing many different parts of the same plant to gather unique foods. They grow using organic practices although they are not USDA certified.
